Amino acids, like many bricks joined together, are the primary structural unit of proteins. Essential amino acids are those that the body cannot synthesize in sufficient quantities for its needs; it is therefore necessary to take them through food. We can define complete, or noble, those proteins that contain all the essential amino acids in balanced quantities and ratios; in general, animal proteins are among those. It is therefore important to have diversified sources of protein, i.e. more types of meat, for an optimal balance of amino acids.
